Andouille Sausage

1-1/2 Yards large sausage casing, approximately (about 2-3 inches wide)
4 Pound Lean fresh pork
2 Pound Pork fat
3 1/3 Tablespoon Finely minced garlic
2 Tablespoon Salt
1/2 Teaspoon Freshly ground black pepper
1/8 Teaspoon Cayenne
1/8 Teaspoon Chili powder
1/8 Teaspoon Mace
1/8 Teaspoon Allspice
1/2 Teaspoon Dried thyme
1 Tablespoon Paprika
1/4 Teaspoon Ground bay leaf
1/4 Teaspoon Sage
5 Teaspoon Colgin’s liquid hickory smoke
Soak the casing about an hour in cold water to soften it and to loosen the salt in which it is packed. Cut into 3 yard lengths, then place the narrow end of the sausage stuffer in one end of the casing. Place the wide end of the stuffer up against the sink faucet and run cold water through the inside of the casing to remove any salt. (Roll up the casing you do not intend to use; put about 2 inches of coarse salt in a large jar, place the rolled up casing on it, then fill the rest of the jar with salt. Close tightly and refrigerate for later use.) Cut the meat and fat into chunks about 1/2 inch across and pass once through the coarse blade of the meat grinder. Combine the pork with the remaining ingredients in a large bowl and mix well with a wooden spoon. Cut the casings into 26 inch lengths and stuff as follows: Tie a knot in each piece of casing about 2 inches from one end. Fit the open end over the tip of the sausage stuffer and slide it to about 1 inch from the wide end. Push the rest of the casing onto the stuffer until the top touches the knot. (The casing will look like accordian folds on the stuffer.) Fit the stuffer onto the meat grinder as directed on the instructions that come with the machine, or hold the wide end of the stuffer against or over the opeoning by hand. Fill the hopper with stuffing. Turn the machine on if it is electric and feed the stuffing gradually into the hopper; for a manual machine, push the stuffing through with a wooden pestle. hey guys
I was watching this video on metacafe of these guys and girls doing hookah tricks and now I really want to buy one!
Do any of you know of any good online stores where i can buy a hooka ?
I would really appreciate the help!

This is a pic of a hookah for those of you that dont know what it is.
Some kids use hooka as a bong for smoking marijuana lol.. i guess you could use it to smoke anything.. Its mainly used to smoke shisha which is usually a fruity flavored tobacco. ( apple, cherry, mango, etc etc)

History of hookas
The hookah pipe originated in North Western India in Rjasthan and Gujarat almost over 2000 years ago. The original hookahs were made from coconut shells with a tube attached and were designed to be used for Opium and Hashish. As this cultural trend spread, it made its way through the Persian Kingdom, modern day Pakistan, Afghanistan, and much of the Middle East. During this time, it acquired tombeik, which is a dark hookah tobacco grown in modern day Iran.
Approximately 500 years ago, the Hookah made its way through Turkey where it gained enormous popularity among elites and intellectuals alike. It was these people that eventually led to the changes in the Hookah’s design and application. With time, the basic coconut base was replaced with glass and the Hookah came to resemble what we have today.
As the Hookah’s popularity started to soar, the tombeik, dark tobacco, was slowly replaced with shisha, a combination of foreign tobaccos, honey molasses, and dried fruit extracts. Hookah tobacco, shisha, comes in a variety of flavors from Apple to Strawberry. Although initially Hookah smoking has been associated with illegal drugs, as awareness spreads the Hookah is becoming more and more popular in Western society.
Today you can find hookahs all over the internet and in many smoke shops around the world. Hookahs have certainly become a worldly-phenomena attracting virtually everyone from all four corners of our globe.
How to Use Hookahs
First you must place water, preferably ice water to cool the Hookah smoke, into the base of the Hookah. After the Hookah’s base is filled appropriately, place the shisha, flavored tobacco, into the ceramic bowl. Cover the Hookah bowl with foil and poke several small holes in it using a small yet sharp device, such as a pen. Light 1-2 Hookah coals and wait until they are amply lit. Place the coal on top of the foil and let it sit for a few moments to start heating the shisha. Gently start to inhale the smooth hookah smoke. Be sure to invite your friends to enjoy this ancient socializing tradition!
